VoLTE is just what it says; Voice over LTE, not a whole separate radio technology.
Ans what relation you mean that it should have with 5G is really rather unclear.
You’re right, I might be mixing it up a little, let me summarize my issue:
This phone supports volte and 5g.
Before inserting this sim, I tried to find some information confirming that this network (Vinaphone) was fully compatible with 5G and Volte.
But in fact, I cannot observe it in the status bar of this phone although I’ve activated in the settings, I rebooted and reactivated but it did not change anything.
I’m not sure if it’s because of this region or due to sailfish os, I don’t really get it
Also I would like to report this to Jolla, this region is maybe not supported.
Your phone itself has to support your carrier for VoLTE.
All phones do 4G data on all carriers, but only some phones will work on VoLTE for a particular carrier. (Yes, I realise this sounds insane)
If the phone did not do VoLTE in Android, it will not do it in SF.
If you did not test it before reflashing to SF, you can flash it back to Android, or try someone else’s X10III if you know of one.
Was the X10III sold locally by local carriers? If it was, VoLTE has a better chance that it was supported.
Sadly here in NZ, Sony did not sell the X10III in NZ, Sony did not include any configuration for NZ, and they do not do VoLTE on any network.
In some countries, apparently, they do work on one carrier, but not another, so you might try sims from all the different carriers.

What Android version did you flash over last time?
I don’t know how much of the VoLTE enablement is in the AOSP blobs versus left from before.
But it sort of looks like flashing SFOS over 13 can work (do form your own opinion), even if only 11 and 12 are recommended.
I’d give it a nonzero (but still slim) chance this helps if the phone was originally flashed over an older version.
