Does anyone know if Sailfish OS can be ported to a Samsung Galaxy S20 FE 5G? If so, how would I go about doing that? (I know very little about phone OSs, a fair bit about computer ones).

It can be ported, but it is a very complicated process, especially if you don’t know much about phones and/or their OSes. If you still want to try, you can read a guide here. More info about this, including porters chat and link to always up-to-date guide, can be found in the documentation.
