More of a question and maybe initiate a discussion but would it be possible to use mkosi GitHub - systemd/mkosi: 💽 Build Bespoke OS Images to create SFOS images?
Yes it more targeted towards normal pc distributions but sfos is a distro after all.

What would be the benefit?
Sailfish OS uses GitHub - sailfishos/mic: Image Creator for Linux Distributions for creating images, and mkosi does something very similar but with more “modern” features and systemd integration. Duranium (Immutable postmarketOS) - postmarketOS Wiki also uses mkosi. It looks like it can be very useful for reliable software updates. But most of the interesting features seem to rely on a UEFI boot process, which we can’t expect to have on all SFOS-capable phones at the moment.
