What exactly are you looking for there? Backing up (i.e. making a copy of) the home folder, or parts of it, via ssh is trivial … ok thinking about it there’s a challenge with some “privileged” files & folders. Nothing insurmountable.
Proof of concept:
ssh Sailfish-phone "devel-su tar cvzf backup.tar.gz /home/defaultuser/"
scp Sailfish-phone:backup.tar.gz .
ssh Sailfish-phone "devel-su rm backup.tar.gz"
