I just stop and start another workout and combine the ones that belong together - just export and remove (I use nano) the last two lines from the first file, the first 20 lines from the last one, both from the middle one(s) and cat them to dot-dot/import/combined.gpx
Kuri rarely crashes during a workout but ordering Chicken Kun Po after donating blood might. And although Kuri treats pauses correctly, Strava doesn’t - the distance traveled during a pause is added so biking before and after a train ride must be separate workouts.
