OK so this was my misunderstanding. I thought you did update SFOS and now Waydroid doesn’t work anymore.
But your problem from now I also had some times earlier as I had a Volla (unfortunately it died meanwhile). So my conclusion back then was: Never update Waydroid, Never change a working system.
At that time I had to completely deinstall Waydroid and then reinstall it, there was no other way, i really tried a lot but couldn’t make it work other way.
I’m just curious: it is supposed to get waydroid working with ne Xperia X V?
I installed it and tried waydroid init
but I get this:

I can’t find that json with mentioned URL so maybe there must be an image prepared?
If so, how to do this?
